Best known as the flavoring for gin and other spirits, Juniper is a natural foil for game and fatty foods. Mixed with salt and garlic it makes a great rub for lamb, pork, game birds and venison. Crushed, they are additive to brines and marinades, and make a good sauce for any hearty meat. It blends well with the flavor of black peppers, marjoram and oregano to bolster a marinade. Crush immediately before using.
