Cumin is strong, heavy, spicy-sweet, with warm depth. The flavor is rich, slightly bitter, sharp, earthy and warm with a persistent pungency; use sparingly. Very popular in Asian cuisines, especially Indian, and essential to curry. Used in many meat and bean dishes, soups and stews, lamb dishes, and even with fruits, such as mangoes, breads, chutneys and relishes. Mixed with oregano and paprika in Mexican cooking. Use ground cumin as a time saver.
