These dried flower buds of an evergreen have a strong, aromatic flavor and aroma. Clove must be used sparingly, for they easily overpower other spices. They are equally good in sweet and savory foods, including baked goods, desserts, syrups and preserves, pickling and mulling spices, as well as meat dishes and rices (often combined with cinnamon and cardamom).
