This incredibly delicious sausage mix is derived from an old family recipe. Sea salt , garlic, fennel, black pepper, red peppers, anise seed and spices.
Grind together 4½# lean pork butt, cubed, and ½# pork fat, cubed. Mix in contents well. Stuff into casings or leave in bulk for patties. Use within 3 days or freeze.
Or 2 table spoon per 1 pound of ground pork. Or season to taste, more or less of the product.
