Caraway has a pungent aroma that, like the flavor, is warm and bittersweet, sharply spicy, with a note of dried orange peel and a slight hint of anise. It is actually the fruit, not the seed of the plant. The "seeds" add a toasted, nutty flavor and a pleasing crunch to many dishes.
