Used in Mexican and Caribbean cooking as a substitute for saffron to impart a rich yellow/orange color. Seeds can also be ground with garlic or chili peppers to make adobo paste, or heated in oil until the skins dissolve and oil turns bright yellow to make Achiote Oil.
